This a quick easy recipe that requires 3 major ingredients and olive oil. I’m happy with just the scallops and spinach in a Vodka Sauce, however, it can be served over pasta, rice, couscous, or farro. Also, I used Vodka Sauce, but Marinara, Tomato Basil or Arrabbiata can work as well.
- 1/2 lb Scallops
- 1/2 da Giulia Vodka Sauce
- 1/4 cup da Giulia Tomato Basil
- 2 cups fresh spinach
- 1 tablespoon canola oil
- (optional cook pasta, rice, couscous, faro, top with scallop and spinach combo)
In medium skillet on medium heat olive oil, add scallops, saute for 5 minutes on one side, turn and saute on the other, remove from heat and place on a plate or cookie sheet on low heat, heat Vodka Sauce for 5 minutes, add spinach and toss with spoon 5 minutes until spinach is wilted. Add scallops and simmer for 5 minutes. serve
