This is a French dish, that can be varied in ingredients and preparation. From all the recipes I found, the two common ingredients are eggplant and tomatoes, and all other vegetables varied, from mushrooms, to zucchini to all colors of peppers. The way I interpret this, use what you have or like. I really don’t like the texture of eggplant, however in this dish, I love it. The eggplant makes the dish. Also, there is a bit of prep involved because the vegetables all need to be cut up, so that’s a bit time consuming and that I don’t like…Using da Giulia Tomato Basil, eliminates a bit of preparation because my recipe calls for minced garlic and diced tomatoes, all that comes in the da Giulia jar along with a flavor enhancer- basil(yaa!) Also, da Giulia is an extremely low sodium sauce, which makes this dish especially healthy! To complete this meal, broil piece of fish or chicken.This is my version based on what I had available.
Ingredients
- 1 medium eggpant diced with skin on
- 1 red pepper diced
- 1 orange pepper diced
- 1 yellow pepper diced
- 1 medium onion sliced
- 1 yellow zucchini peeled and cubed
- 1 tablespoon olive oil
- 2 cups da Giulia Tomato basil
Instructions
- heat olive oil in skillet on medium
- add onions saute on slightly translucent about 5-7 minutes
- add eggplant, saute another 5 minutes
- add peppers saute another 5 minutes add da Giulia
- simmer all together 10 minutes
- remove and serve
