I love love this blog.  They focus on a lot of local producers and easy recipes, which is right up my alley.  This recipe is quite simply just delicious.  Its creamy and gooey with the added bonus of being so easy to prepare, and loaded with tons of nutrients.  The combo of Avocado, Tomato and Cheese may go down in history as my favorite combo of all time.


  • 1 medium ripe Avocado
  • 1 cup da Giulia Tomato basil
  • 1/4 cup melting cheese
  • 8 slices whole wheat bread
  • 2 tablespoons melted butter

Preheat oven to 350Slice Avocado in half and remove stone.  Carefully remove skin and slice avocado in one 1/4 inch pieces..  Brush one side of each slice bread lightly with butter.     Line up 4 pieces  bread on cookie sheet and top 4 pieces evenly with avocado, 1/4 cup da Giulia Tomato basil and slice of cheese(cheddar, swiss, mozzarella or provolone_whatever melts well)   Place in oven and bake for 15 minutes until cheese is melted.  Remove from oven and heat skillet sprayed with cooking spray.  Heat sandwiches 2 minutes on each side, until bread is crispy.
