I have to be honest and admit that I have attempted to make this several times and did not have success, and when I started to write this recipe post, I started to include all the mistakes I made each time, because they were different mistakes every time.  However, half way through that novella, I decided it was too much info, and I would just give the recipe that finally worked for me, and the recipe that I will make again.  It was really delicious and truth be told my Lasagna from scratch eating family did not miss the lasagna pasta noodles they were accustomed to at all!

Ingredients

  • Da Giulia Tomato Basil saue
  • 3 medium zucchinis (8 ounces each)
  • Sliced in 1/8 thick slices
  • 1 1/2 cup ricotta – part skim
  • 1/4 cup Parmigiano Reggiano
  • 1 large egg
  • 2 cups Mozzarella cheese

Instructions

  1. Lightly salt zucchini strips and place on cookie sheets for 10 minutes
  2. Zucchini has a lot of water when cooking and salting helps remove the water
  3. After 10 minutes blot with paper towel
  4. Pre heat gas grill or grill pan to medium heat
  5. and grill zucchini two to minutes each side until slightly browned
  6. place on paper towel to absorb remaining moisture
  7. Pre heat oven to 350
  8. In medium bowl mix ricotta, parmigiana and egg
  9. In 9 x12 casserole spread 1/2 cup da Giulia sacue on bottom
  10. top with strips of zucchini and completely cover bottom of pan
  11. add 1/2 cup rictto mixture and 1 cup mozzarella
  12. repeat whole process, until ingredients are all used up
  13. Bake 20 minutes and add any remaining mozzarella(there should be at least one cup left)
  14. bake until cheese is melted about 10 minutes
  15. Remove from oven and let stand 10 minutes
  16. Serve !
