This is a quick 6 ingredient recipe that will have your family asking for seconds. The  richness of the creamy tomato soup and the crunchy exterior but smooth interior mini bites of grilled cheese, made even more gooey by the heat from the soup.  The flavors do remind me of Lunches served at middle school.  I liked very few of them, but I always ordered lunch when Tomato Soup and Grilled Cheese were served.

Ingredients

  • 1 Jar 26 oz da Giulia Tomato Basil Sauce
  • 1 1/4 cup chicken or vegetable broth
  • 1/2 cup heavy whipping cream
  • 4 slices bread of choice( I used a multi grain)
  • 4 ounces cheese( I used gruyere, but any cheese of choice that melts well will do)
  • 1 tbsp. Butter or butter spray

Instructions

  1. In medium pot heat da Giulia Tomato Basil and broth
  2. let come to boil and then reduce to a simmer for 10 minutes
  3. With immersion blender or blender, blend until smooth
  4. put back in pan and stir in cream
  5. simmer for 5 minutes stirring the whole time
  6. in meantime coat one side of all 4 pieces bread with butter
  7. and lay cheese evenly in between two pieces of bread to make a sandwich
  8. place on heated Panini maker or fry pan on medium heat(cover with a lid)
  9. With Panini maker cook on each side for 45 seconds or until cheese is melted
  10. In fry pan it may take a bit longer depending on the heat
  11. lower heat if bread is charring to fast and cheese isn’t melted
  12. When cheese oozing from sides slightly, remove from heat
  13. let stand for minute on cutting board and then cut in strips, 1″
  14. Serve soup in four soup bowls and top with grilled cheese
  15. serve remaining grilled cheese as well, because grilled cheese should never go to waste!
