Tonight we had Pasta with Spinach, but we added a little protein and included chicken. Quick, easy and tasty! 2 pan cooking and 20 minutes only! I remember making this dish very often when my son was a tot. I always say every vegetable taste better with Vodka Sauce. I love almost every vegetable, but not sure I did when I was a kid. I was forced to eat many, without the help of a lush creamy Vodka Sauce like my son has had the pleasure to do many many times. Ive made Pasta Vodka Sauce with every vegetable from spinach, broccoli, eggplant, mushrooms, asparagus, and the list goes on and on.
Ingredients
- 8 ounces of Pasta
- 2 Chicken Breasts diced in 1 inch pieces
- 2 cups of fresh spinach
- 1 tablespoon olive oil
- 2 cups Da Giulia Vodka Sauce
- 1/4 cup chaved Fresh Parmesan
Directions
- Boil pasta according to instructions
- Heat olive oil in Large skillet on medium
- Add diced chicken and cook until no longer pink
- Lower skillet to low and add spinach once chicken cooked
- Toss for 2-3 minutes until cooked
- While cooking chicken heat sauce in sauce pan
- Transfer pasta to the large skillet with chicken and spinach and add sauce
- Toss for 1 minute and then plate
- Add shaved parm. cheese
- Enjoy! 🙂
