I found this on www.skinnytaste.com and loved it. My family loved it too, what a great way to get the effects of Lasagna, but not all the work. I’ve made this several times, and used different noodles every time, including whole wheat penne. Also, I’ve used all kinds of different shredded cheese; mozzarella, provolone, asiago, and parmesan.
Also, vegetables can be added to round out the nutrition. Spinach, kale, peas, mushrooms, or any other that might appeal.
8 ounces pasta
1 tsp olive oil
2 cups chicken broth
1 cup marinara, arrabbiata or tomato basil
3/4 cup ricotta cheese
1 cup shredded cheese(mozzarella, provolone, asiago, parmesan) all four, or just one, whatever available or preferred!
cook noodles to instruction
in large sauce pan heat broth, marinara and olive oil on low, stirring to combine all ingredients into a smooth broth, heat for 15 minutes
In small bowl combine ricotta and shredded cheese
In four bowls, divide noodles evenly, pour broth evenly into bowls, and top each bowl with cheese
serve
