This dish worked great with sausage, however, it can work just as well with chicken, tofu or more vegetables can be added. This worked well with the crowd we were feeding. I don’t eat sausage, so I ate around it. The dish is quick, easy and very kid friendly.
This dish fed 8, so recipe can be adapted for smaller group, also I used Arrabbiata, but Marinara can work just as well, if spice is not wanted.
2 lb sausage(I used chicken, feta spinach)
2 medium red peppers diced
1 medium yellow pepper diced
1 medium orange pepper diced
1 medium onion sliced
2 cups fresh spinach
2 cups da Giulia Arrabbiata
2 tablespoons oil(canola or olive oil)
In large sauce pan on medium flame heat oil for 2 minutes, add onions, saute until translucent
add peppers, stirring and sauting 12-15 minutes, until slightly soft
remove from heat, put peppers in separate bowl
add sausage whole to pan
cook 10 minutes turn and cook on other side
remove from heat and place on cooking board
slice into 1 inch pieces
add Arrabbiata to pan heat on medium for 5 minutes add peppers, sausage and spinach
simmer for 15 minutes
remove and serve
