Im calling this Chicken Italiano because the colors look like the Italian flag. My friend Christins boyfriend can attest to how easy this was to make. The other day, I had to make a bunch of entres and only really had about an hour/hour and a half to cook, before I had to be somewhere else. He was the taste tester and now he is a believer that it is still cooking when one opens a jar of sauce and it can be mmmm good as well. The recipe took less then 20 minutes and if I don’t count salt and pepper, it used just 5 ingredients.
This recipe can feed 4, adjust
accordingly
4 butterflied chicken breast
1 cup Marinara, Arrabbiata or Tomato Basil
2 cups spinach
1 tablespoon olive oil
4 slices mozzarella, provolone, swiss (whatever preference)
In large skillet heat olive on medium, toss in spinach(salt and pepper spinach lightly-optional, I personally add some pepper and garlic powder- skip the salt)
saute for 5 minutes and remove from skillet
place lightly seasoned chicken breast in skillet on medium(again seasoning is always optional, if salt is an issue, just use pepper, Im a fan of garlic powder, there is trace amount of sodium and gives great flavor with no negative health effects)
cook chicken breast thoroughly, about 3-4 minutes on each side
when cooked, place a slice of cheese on each breast
at same time heat da Giulia sauce in a sauce pan on medium
cover pan with a lid for two minutes or until cheese is melted
remove from heat
plate each dish with spinach
top with chicken and sauce
serve
